Ingredients
- 1 cup carrots, peeled and chopped
- 1 cup sweet potato, peeled and chopped
- 1/2 cup peas
- 1/2 cup water or low-sodium vegetable broth
Instructions
- 1.Wash, peel, and chop the carrots and sweet potato into small pieces.
- 2.Place the carrots, sweet potato, and peas in a small pot with the water or broth.
- 3.Bring to a gentle boil, then reduce heat and simmer for about 15 minutes until the vegetables are very soft.
