Ingredients
- 2 chicken breasts (about 200g each)
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 small sweet potato, diced

Instructions
- 1.Preheat the oven to 200°C (400°F).
- 2.Toss zucchini, bell pepper, and sweet potato with 1 tbsp olive oil, salt, and pepper. Spread evenly on a baking tray.
- 3.Roast vegetables for 20–25 minutes until tender and lightly browned.
- 4.While vegetables roast, season chicken breasts with paprika, garlic powder, thyme, salt, and pepper.
- 5.Heat a grill pan over medium-high heat and brush lightly with olive oil.
- 6.Grill chicken breasts 5–6 minutes per side until cooked through and juices run clear.
- 7.Serve grilled chicken alongside roasted vegetables.
