Ingredients
- 4 eggs
- 4 cups mixed salad greens
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- 1.Place the eggs in a pot of water, bring to a boil, and cook for 8–10 minutes until hard-boiled.
- 2.Drain the eggs, cool them under cold water, peel, and slice them.
- 3.Wash and dry the salad greens thoroughly.
- 4.In a large bowl, toss the salad greens with olive oil, lemon juice, salt, and black pepper.
- 5.Divide the salad greens onto two plates and top with the sliced eggs.
