Ingredients
- 1 cup brown rice
- 2 cups mixed vegetables (such as carrots, peas, and green beans)
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried oregano
Instructions
- 1.Rinse the brown rice under cold water and cook according to package instructions until tender.
- 2.While the rice cooks, heat olive oil in a large pan over medium heat.
- 3.Add chopped onion and garlic, sauté for 2–3 minutes until fragrant.
- 4.Add mixed vegetables, salt, pepper, paprika, and oregano. Cook for 5–7 minutes until vegetables are tender but not mushy.
- 5.Once rice is cooked, fluff with a fork and divide into bowls.
