Ingredients
- 2 cups fresh spinach
- 1 cup cooked chickpeas
- 1 small cucumber, diced
- 1 medium tomato, diced
- 1/4 small red onion, finely chopped
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp ground cumin
- 1/4 tsp black pepper
- 1/4 tsp salt (optional)
- 1 tbsp fresh parsley, chopped
Instructions
- 1.Wash and pat dry the spinach, cucumber, tomato, and parsley.
- 2.Dice the cucumber and tomato, and finely chop the onion and parsley.
- 3.In a large bowl, combine chickpeas, spinach, cucumber, tomato, and onion.
- 4.In a small bowl, whisk together olive oil, lemon juice, cumin, pepper, and optional salt.
- 5.Pour the dressing over the salad, toss well, and garnish with parsley.
- 6.Serve immediately as a fresh, balanced meal.
