Ingredients
- 1 cup dried lentils
- 4 cups vegetable broth

Instructions
- 1.Rinse the lentils thoroughly under cold water.
- 2.Heat olive oil in a large pot over medium heat.
- 3.Add diced onion and minced garlic, sauté until fragrant and softened.
- 4.Stir in cumin and paprika, cooking for 1 minute to release flavors.
- 5.Add lentils and vegetable broth, bring to a boil.
- 6.Reduce heat to low, cover, and simmer for about 25 minutes until lentils are tender.
- 7.Stir in fresh spinach and cook for 2–3 minutes until wilted.
- 8.Season with salt and black pepper to taste before serving.
