- 10 medium potatoes, diced
- 17 tomatoes, chopped
- 1 whole garlic bulb, cloves peeled and minced
- 2 medium onions, sliced
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tbsp fresh lemon juice
Instructions
- 1.Preheat the oven to 400°F (200°C).
- 2.Wash and dice the potatoes into bite-sized cubes; chop the tomatoes; slice the onions thinly; mince the garlic.
- 3.In a large mixing bowl, toss potatoes, tomatoes, onions, and garlic with olive oil, salt, pepper, oregano, and thyme.
- 4.Spread the mixture evenly on a parchment-lined baking sheet.
- 5.Roast for 30–35 minutes, stirring halfway through, until potatoes are golden and tender.
